Cookies for Grown-ups: Pumpkin Dark Chocolate Chip

I love autumn. Sure, I love it for the breezy weather, the pretty leaves turning colors, and that I can finally wear tons of layers and lovely coats. But I also love fall because of the delicious produce that grows this time of year. Gourds, tubers, and stone fruits are all yummy plain, but they taste even better when baked. Fall baking denotes the usage of warm spices like cinnamon, nutmeg, ginger, and cloves. Just the smell of any of those spices warms me up!

I was really craving some pumpkin pastries the other day, but I didn't quite know what I wanted. I needed something soft but with substance, and rich but not overpoweringly pumpkin. I love how these cookies turned out! They're pillowy soft, like taking a bite off a cloud, but they're also kinda hearty and chewy. I used dark chocolate because I wanted some bitterness in the mix. Though the recipe only calls for a little bit of salt, it really comes through and complements the chocolate. This isn't the kind of cookie that can just eat like popcorn. It's a cookie to be savored, and I assure you-- each bite is a menagerie of flavor and texture in your mouth. Definitely not for kids ;) 

Pumpkin Dark Chocolate Chip Cookies
(makes 3 dozen)
Ingredients:
1 stick butter, room temperature
1.5 cup brown sugar
1 egg
1 teaspoon vanilla
1.5 c pumpkin puree
3 c flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
12 oz dark chocolate chips

Directions:
*preheat oven to 350 degrees F
1. Cream butter and sugar, add vanilla and egg until blended. Add in pumpkin puree.
2. In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Add to pumpkin puree mixture and mix well. 
3. Fold in chocolate chips with a spatula.   
4. In parchment-lined cookie sheets, spoon tablespoon-sized balls of cookie batter 1 inch apart. 
5. Bake cookies for 14-15 minutes

    I was like "Back the Funk up, brownie bits in peanut butter cookies!!?"

    That got me in a cookie mood, then I see this post. It will be cookie time tonight...although I always overbake mine on accident so they aren't pillow soft. :(

  45. oooh, YUM! i love pumpkin everything! i've been seeing some great recipes...one for pumpkin donuts!! never did have a pumpkin cookie, either! and yesterday, my mom bought some chinese noodles and manapua from this one place here, and they had a seasonal pumpkin manapua. it was so good!
